Raw soups for summer

At this time of year, no one wants to spend ages in front of the cooker, but too many salads can get boring as well. Why not try some tasty raw soups to pack some veggies into your diet with very little effort? Here are some recipes to start you off:


All of these soups are easily adaptable, just change the veggies and spices to whatever you have on hand! 

This is a really filling tasty soup:
Raw Avocado Lime Soup

Serves: 4 to 6  (small bowls)

Ingredients:
2 avocados
¾ of a medium cucumber
1 stalk celery
Juice of 1 lime
Small handful of fresh coriander (cilantro)
2 teaspoons cumin
1 teaspoon ground coriander
½ teaspoon salt
1 teaspoon tamari
1 cup water (if wanting warm soup use hot water)
Chives, chopped to garnish

Blend all ingredients, except the sour cream and chopped chives in a high-speed blender until smooth.
Transfer to a serving bowl and garnish with sour cream and chopped chives.

Indian-Spiced Raw Tomato Soup
Serves 1

Ingredients:
2 medium tomatoes,
1/3 celery stick
1 x 2 inch thick slice of cucumber
1 thick slice of red pepper
10 fresh baby spinach leaves
1 small garlic clove
1 tbsp chopped red onion
2 stalks of fresh coriander
dash of soy sauce/tamari/ Braggs aminos
1/4 tsp cumin powder
1/4 tsp coriander powder
a dash of red chilli powder 
black pepper to taste

Chop all the veggies and blend in a blender until smooth.

This soup would work well with Italian style herbs - replace the coriander, cumin and chilli with fresh basil and oregano.
Here is a side plate with all the veggies for the Tomato soup to give you an idea how many of your five a day you're getting in one small bowl.


Energising Soup

I found this soup on my colleague's Facebook Page (Michelle Hanley Nutrition and Juice Specialist) - it sounded very strange, but it tasted good! I left out the seaweed and replaced the almond butter with peanut butter.
